En el siguiente trabajo se reconoce el potencial de las comidas típicas, pero también la falta de potencializar el turismo gastronómico para que se pueda fomentar los productos de origen del departamento de Huila, en el cual los modelos de franquicias de comidas rápidas han hecho disminuir la oportunidad del valor de las comidas autóctonas. Según lo mencionado con lo anterior, se hace una investigación de algunos aspectos del turismo gastronómico para complementarlo mediante la arquitectura móvil como un prototipo móvil transformable que se adapte al espacio y las necesidades, que se pueda despiezar y trasportar como en la arquitectura efímera, como método para llevar a cabo los modelos de franquicias como reconocimiento de los platos típicos de la región que aborda una importancia de identidad en nuestro país.
