Sumario:The present work aims to collect information on the presence of MO (microorganisms), such as Coliforms, Salmonella sp, Clostridium, among others present in consumer products, as well as surfaces of a poultry processing plant in the city of Bogota, in the periods from 2017 to 2020, where the control of the GMP (Good Manufacturing Practices) and the evaluation of the SSOP (Standardized Operational Processes of Sanitation), will be determinant to generate a decrease of the load of microorganisms in the plant, as well as to assure the production of innocuous food for the human consumption. Knowing that the last report generated by the WHO (World Health Organization) reports that about 95% of diarrheal diseases in humans are a result of FD (Foodborne Diseases) (WHO, 2015), where the role of the veterinary doctor generates the impact of change in the food production chain.
