Sumario:Public health in Colombia is a priority for veterinary doctors due to the great number of existing zoonotic diseases, in the case of derived products of the meat of swine, cattle, sheep, poultry and other species from the slaughter of the live animals, going through the processes of transforming meat into carcasses and the minimum conditions that must be met by the establishments in charge of their storage, maturation and subsequent marketing, there are serious problems that arise due to lack of awareness and ignorance of the current regulations for producers and/or personnel in charge of animal benefit plants on the standards sanitary, taking into account the safety of the animals that are taken for slaughter are in optimal conditions in their health and health plan (Villamil J. Et al., 2012)
