Summary:In this proposal, the objective is to design an improvement in the production process of drinking water in the company El Rocio in the municipality of Duitama Boyacá, where it is wanted to guarantee that the processes, the machinery and the innocuousness of the raw material are in a ideal state so that there are no bottlenecks during the production process of potabilization; guaranteeing the consumer a beverage free of pathogens or contaminants. The development of this thesis was carried out by characterizing the production process with elements of information collection such as: a checklist which was carried out depending on resolution 2674/2013 and decree 1575/2007, from the characterization of the processes, a HACCP system was used as a tool to identify hazard analysis and critical control points within the production process, from the reception of the raw material to the final delivery of the product to the consumer; The physical, chemical and biological dangers were fixed, identifying the dangers that can occur in each of the stages, the critical control points that endanger the safety of the product were determined.
