description	In this research project, the municipality of Hobo-Huila is mainly studied, since it presents a problem that the coffee union has suffered throughout the Colombian country for many years, due to the low purchase price of the coffee load and the high costs of production, since the sustainability of the crops is affected by the high prices of inputs and the direct cost of labor in the harvesting process. For this reason, the behavior originated by coffee producers to seek good purchase prices is mainly examined, since management occurs through informal trade referred to small traders who are governed by the price stipulated by cooperatives. that preside over the commerce of the Huila region. Taking into account the problems caused by the low cost of purchasing coffee, research is being carried out on products and by-products derived from coffee, since nowadays in small parts of the country it is used only in an artisanal way. It concludes by proposing industrialization strategies to solve the problem; good coffee practices through process unification; model in the industrial field through architectural environments; contemplate the relationship of spaces between the handling, processing, and industrialization of coffee.

En este proyecto de investigación se estudia principalmente el municipio de Hobo-Huila, ya que presenta una problemática que sufre el gremio cafetero en todo el país colombiano desde hace muchos años, debido al bajo precio de compra de la carga de café y los altos costos de producción, ya que la sostenibilidad de los cultivos se ve afectada por los precios elevados de los insumos y el costo directo de la mano de obra en el proceso de recolección. Es por ello, que se examina principalmente el comportamiento que originan los productores de café para buscar los buenos precios de compra, ya que el manejo se da por medio del comercio informal referido a los pequeños comerciantes que se rigen por el precio que estipulan las cooperativas de comercio de la región del Huila. Teniendo en cuenta la problemática originada por el bajo costo de compra del café, se investiga acerca de los productos y subproductos derivados del café ya que hoy en día en pequeñas partes del país se da el aprovechamiento solo en forma artesanal. Se concluye proponiendo estrategias de industrialización para la solución del problema; buenas practicas del café mediante unificación de procesos; modelo en el ámbito industrial mediante ambientes arquitectónicos; contemplar la relación de espacios entre el manejo, procesamiento, e industrialización del café.
